Perfect with your morning coffee or as a sweet treat. These are so yummy and easy to make.
INGREDIENTS
100g of oats
80g of oat flour (or normal plain flour)
1/4 of a teaspoon of bicarbonate of soda
50g of almond butter (smooth/runny)
2 ripe bananas, mashed
50g white chocolate, chips or sliced into chunks
80g of raspberries (I also made these with blueberries)
METHOD
Preheat your oven to 180 degrees, and line a baking tray with parchment paper.
Mash the bananas in a large bowl and stir in the almond butter (I added a squeeze of honey as I was low on almond butter)
Stir in the oats, flour and bicarbonate of soda.
Fold in the chocolate chips/chunks.
The mixture will be sticky, divide into about 10 cookies. Roll into balls place on to the baking tray and press down.
Then I carefully placed the raspberries into the 10 cookies (you can mix them into the mixture but I didn't want to crush them completely)
Bake for 12-14 minutes until golden.
Allow to cool or enjoy warm!
